Mac N Cheesy Crunchy Pleasy

- 2 tbs unbleached flour shopping list
- 2 tbs unsalted butter shopping list
- 2 1/2 cups whole milk shopping list
- 1/2 cup white wine shopping list
- 1 tbs dijon mustard shopping list
- 1 tsp cayenne pepper shopping list
- 2 tbs onion powder shopping list
- 1 tsp garlic powder shopping list
- 1/4 tsp nutmeg shopping list
- 1 tsp ground black pepper shopping list
- 1 tsp smoked paprika shopping list
- 1/2 cup grated parmesan cheese shopping list
- 2 1/2 cups freshly grated mild cheddar cheese shopping list
- 1/2 cup habanero white cheese shopping list
- 1 lb medium elbow macaroni shopping list
- 1 cup of crushed kettle cooked plain potato chips shopping list
How to make it
- combine butter and flour; make roux; add 1/2 cup of milk, whisk rapidly, add wine, whisk again, wait 5 min to wait for alcohol to evaporate over med low heat. Add rest of milk very slowly every 2 minutes. Add seasonings, whisk. Add cheeses (reserve 3/4 cup of mild cheddar aside) and whisk. Boil macaroni in separate pan only half way. Drain Macaroni and add into a buttered casserole dish. Add extra pads of butter throughout the macaroni. Add cheese mixture to macaroni. Mixture should be very soupy. Add reserved cheddar, paprika, and potato chips on top. Cover with foil. Bake at 350 for 20 min. Uncover and bake at 400 for 12 min.
