How to make it

  • combine butter and flour; make roux; add 1/2 cup of milk, whisk rapidly, add wine, whisk again, wait 5 min to wait for alcohol to evaporate over med low heat. Add rest of milk very slowly every 2 minutes. Add seasonings, whisk. Add cheeses (reserve 3/4 cup of mild cheddar aside) and whisk. Boil macaroni in separate pan only half way. Drain Macaroni and add into a buttered casserole dish. Add extra pads of butter throughout the macaroni. Add cheese mixture to macaroni. Mixture should be very soupy. Add reserved cheddar, paprika, and potato chips on top. Cover with foil. Bake at 350 for 20 min. Uncover and bake at 400 for 12 min.

    I have all the ingredients in the house except the habanero cheese and will get that ASAP. I have always said that I wouldn't mind if macaroni cheese (as we always called it when I was growing up in the UK) would be fine with me as my final meal on earth. This is much like what I already make, but sounds even better. Can't wait to try, thanks. :)
