Sesame Orangeyaki Stirfry With Tofu

Tofu:
- 1 lb low-fat extra firm tofu, frozen, thawed, pressed and cubed shopping list
- 1 lb black soybean tofu (from Vitasoy / San Sui), frozen, thawed, pressed and cubed shopping list
- 1/4 cup raw sugar shopping list
- 1 tsp ground ginger shopping list
- 2 tsp garlic powder shopping list
- 2 tsp black pepper shopping list
- 1/4 cup tamari (I used San-J Black Label) shopping list
- 2 tbsp water shopping list
- 1 1/2 tbsp Sriracha shopping list
- 1 1/2 tbsp unseasoned rice vinegar shopping list
Stir Fry:
- 2 tbsp toasted sesame oil shopping list
- 1 1/2 large sweet onions, diced shopping list
- 1 tbsp fresh-grated ginger shopping list
- zest and juice of 2 oranges shopping list
- 2 cloves minced garlic shopping list
- 4 stalks celery, sliced shopping list
- 1 red bell pepper, thinly sliced shopping list
- 10 cremini or button mushrooms, sliced shopping list
- 225 g broccoli florets shopping list
- 4 heads baby bok choi, sliced shopping list
- 2/3 cup teriyaki sauce (I used San-J) shopping list
- 1/2 cup Asian-style orange sauce (I used San-J Orange Sauce) shopping list
- 1 tbsp cornstarch shopping list
- 60 g chopped green onions shopping list
How to make it
Tofu:
- In a shallow, covered dish, combine the sugar, ginger, garlic, pepper, tamari, water, Sriracha and vinegar. Whisk well.
- Add the tofu pieces and fold through, coating evenly.
- Cover and marinate overnight.
Stir Fry:
- Heat oil in a large saute pan over high heat.
- Drain the tofu and add to the pan in one layer.
- Cook, without stirring, for one minute, then carefully stir in the onions, ginger, orange zest and garlic. Cook 5 minutes, until onions begin to soften.
- Add the celery, bell pepper, mushrooms and broccoli See Photo. Cook 8-10 minutes, until softened.
- Add the bok choi and cook 2 minutes.
- While the vegetables cook, whisk together the orange juice, teriyaki and orange sauces, cornstarch and green onions.
- Add to the hot pan and cook, stirring, until thickened.
- Serve over rice or noodles.
