Curried Cod In Coconut Broth

- 3 packs of ramen noodles, seasoning packet discarded shopping list
- 2 six ounce cod fillets (mine were frozen) shopping list
- 1 1/2 cups of chicken stock shopping list
- 8 ounces of coconut milk shopping list
- 1 tbsp. vegetable oil shopping list
- 1 red onion, cut in half moons shopping list
- 1 green pepper julienned shopping list
- 1 large garlic clove minced shopping list
- 3/4 cup of edamame, shelled shopping list
- 3/4 tsp. of curry powder shopping list
- 1/2 tsp. of cayenne pepper shopping list
- 1/2 tsp. turmeric shopping list
- 1/2 tsp. ginger shopping list
- 1/2 tsp. black pepper shopping list
- 1/2 tsp. salt shopping list
- generous red pepper flakes shopping list
How to make it
- Break up the ramen noodles. Discard seasoning packets.
- Heat oil in deep saute pan (I used my wok) and saute onion, pepper strips and garlic until slightly softened.
- Add chicken broth and bring to a low boil.
- Add cod, seasonings/spices and ramen noodles.
- Simmer 5 minutes. Add coconut milk.
- Simmer another five minutes.
- Add edamame.
- Eat. Preferably with a cold beer to tame the heat.
