How to make it

  • Heat oil and butter in medium fry pan or skillet.
  • Sauté chicken in oil mixture over med heat until lightly browned.
  • Stir in tomatoes and spinach and cook until spinach and tomatoes soft. Season with salt and Italian seasoning.
  • Lower hear and Cook a few minutes.
  • Right before serving stir in cheese.
  • Serve with your favorite hummus and either fried tortillas or pita.
  • You can add black olives, garlic, or onions if desired.
