Metis Celebration Bannock

- 3 cups flour shopping list
- 2 ½ cups barley flour shopping list
- 1/3 cup rolled oats shopping list
- ¼ cup fine cornmeal shopping list
- 3 tbsp baking powder shopping list
- ½ tbsp salt (use smoked salt for more of a campfire flavour) shopping list
- 2 tbsp canola oil shopping list
- 3 tbsp maple syrup or honey shopping list
- 2 ¼ cups water shopping list
- 1 cup blueberries shopping list
Note:
- This is *not* a sweet bread. If you want more of a sweet flavour, add 2-3 tbsp brown or maple sugar to the flour mixture. shopping list
How to make it
- Preheat oven to 350°F and line a 9x13” pan with parchment or greased foil.
- Mix together flours, oats, cornmeal, baking powder and salt in a large bowl.
- Stir in the oil, maple syrup and water until a thick dough forms. Stir in the blueberries.
- Knead in the bowl for about 1 minute, until the dough is not too sticky. It does not need to be perfectly smooth.
- Press the dough evenly into the prepared pan.
- Bake for 35-40 minutes. The bread should be slightly brown and springy to the touch.
- Turn out onto a cutting board or cooling rack and slice while still warm.
