Peas And Pancetta

- 2tbsp Extra Virgin Olive Oil shopping list
- 60g/2oz Pancetta (or Unsmoked Streaky bacon) - chopped shopping list
- ¼tsp Garlic - finely chopped shopping list
- 3tbsp Onion - chopped shopping list
- 450g/1lb Peas - frozen - defrosted shopping list
- 60ml/4tbsp dry White Wine shopping list
- 1½tbsp. fresh Thyme - leaves only shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Heat the olive oil in a frying pan, medium heat;
- Add the pancetta and sauté for about 3 minutes until colours but not crisp;
- Add garlic and onion and continue cooking, stirring occasionally, for a further 4 minutes or so until onions softened a bit;
- Stir in the peas, wine, thyme and salt and pepper to taste;
- Bring to the boil, reduce heat and simmer for 3 to 5 minutes or so until peas are tender and liquid reduced to next to nothing.
- Serve
