How to make it

  • 1. Place eggs in a saucepan and cover with water. Bring to a boil, remove pan from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool them under cold running water and peel. Chop eggs and transfer to a salad bowl.
  • 2. Mash avocado in with the chopped eggs. Then add the onion, yellow mustard and paprika until thoroughly combined. Season with salt and pepper.
  • 3. Serve with your favorite bread and crackers. Enjoy!

    eastcoaster ate it and said...
    I like the mix of egg and Avocado, and this was perfect.a very nice light lunch, or snack.
    I cut it way back, just me having it. 1 egg, 1/2 Avocado.The only thing i did not use was the green onion,only because i didn't have any. I put mine on a rice cake rather then bread. I grabbed smoked paprika by mistake but it was great.
