Vegetable Rice

- 1 tablespoon unsalted butter or margarine shopping list
- 1 cup white or brown rice shopping list
- ¼ cup minced onion shopping list
- 1/8 teaspoon each salt, pepper, and garlic powder shopping list
- ½ to ¾ cup minced vegetables, such as broccoli and carrots shopping list
- 2 cups low sodium chicken broth shopping list
How to make it
- 1. In a saucepan over medium heat melt butter and cook onion until transluscent.
- 2. Add rice and stir to coat, add vegetables and stir. Let warm for about 20 seconds stirring frequently. Turn up the heat and add the seasonings and broth. Stir; cover and bring to a boil then turn down to a simmer. Simmer for 20 minutes then remove from the heat and let set covered for another 20 minutes. Then Serve
