How to make it

  • Rub toasted bread with garlic clove;
  • Spread on the sliced/chopped tomato and season with salt and pepper;
  • Lightly sprinkle oil over the tomatoes and toast;
  • Sprinkle over with torn basil;
  • Serve as is or with sprinkling of Parmesan over everything.
  • Serve

    Hi Don
    I know I am "weird", but I like my bruschetta a bit different. I use Italian bread, sliced about 3/4" (19mm) thick, buttered with garlic butter (both sides) and lightly fried. Once one side is sort of scorched, flip and top it with a slice of provolone (or similar stinky cheese) and a small wafer of salami, or similar Italian sausage, until the cheese melts, and top with very similar to what you suggest, adding a bit of basalmic vinegar and EVOO.
