How to make it

  • Sauté diced onions in bacon/duck fat until translucent, then add diced peppers (remove ribs and seeds for less heat) and tomatillos. Sauté until soft. Add dried chile powder, roasted garlic and corn and cook for another minute or two.
  • Cover with chicken stock and bring to a simmer. Add coconut milk and season with salt to taste. Bring back up to simmer.
  • Add beans and chicken. Taste for salt. Optional (mix 2T masa flour or cornstarch with 1/4c warm water and add to simmering pot if you want thicker liquid).
  • Serve with crumbled Cojita cheese and tortilla chips.
