Green Chile, Chicken And White Bean Soup

- 2T bacon fat, butter or oil of choice shopping list
- 1 large sweet onion, diced shopping list
- 1 poblano pepper, diced shopping list
- 1 anaheim pepper, diced shopping list
- 1-2 jalapenos, diced shopping list
- 6 cloves roasted garlic shopping list
- 4 small tomatillos shopping list
- 4 ears of fresh corn, corn removed from the ear shopping list
- 1.5 tsp hatch green chili powder shopping list
- 3 cups chicken stock shopping list
- 1 can coconut milk or 1.5 cups whole milk or half & half shopping list
- 2 cans cannelini or other white beans, drained shopping list
- Meat from 1 roasted or rotisserie chicken, shredded shopping list
- Sea salt or kosher salt shopping list
- Cojita cheese crumbles shopping list
- Tortilla chips for serving, if desired shopping list
How to make it
- Sauté diced onions in bacon/duck fat until translucent, then add diced peppers (remove ribs and seeds for less heat) and tomatillos. Sauté until soft. Add dried chile powder, roasted garlic and corn and cook for another minute or two.
- Cover with chicken stock and bring to a simmer. Add coconut milk and season with salt to taste. Bring back up to simmer.
- Add beans and chicken. Taste for salt. Optional (mix 2T masa flour or cornstarch with 1/4c warm water and add to simmering pot if you want thicker liquid).
- Serve with crumbled Cojita cheese and tortilla chips.
