Creamy Dill Sauce

- 1 heaped tsp Wholegrain Mustard; shopping list
- 1 heaped tsp Dijon Mustard; shopping list
- ½tsp Sugar; shopping list
- 75ml/2½ fl oz Extra Virgin Olive Oil; shopping list
- 1tbsp White Wine Vinegar; shopping list
- 1 to 2 tbsp (to taste) fresh Dill - finely chopped; shopping list
- Pinch Salt; shopping list
- 1tsp Hot Water. shopping list
How to make it
- Whisk the 2 mustards, sugar and salt in a bowl till well blended;
- Pour the oil slowly and steadily into the bowl, whisking continually;
- Continue until the mixture has thickened and approx half the oil has been added;
- Slowly add the wine vinegar, still whisking and finally, continue slowly adding the rest of the oil, still whisking, until all has been added and the mixture emulsified smoothly;
- Stir in the dill and the hot water.
