Zucchini Parmesan

- 1 T. olive oil shopping list
- 1 small-medium zucchini, cut lengthwise and sliced shopping list
- 1 C. or so homemade marinara sauce (see note) shopping list
- Hot, cooked whole grain spaghetti or linguine pasta shopping list
- Shredded Parmesan cheese shopping list
How to make it
- In a large skillet, heat olive oil over medium-high heat. Add zucchini and sauté until softened, about 5-10 mins. Stir in marinara sauce and cook and stir until heated through, about 5 mins. Serve over pasta and sprinkle servings with Parmesan cheese.
- Note: You can use the jarred stuff, but I like homemade marinara because it's thicker and so much more flavorful. I usually have some sauce left after a spaghetti dinner and keep it in the freezer until I'm ready to make this dish. You can also use white pasta instead of the whole grain. It doesn't look like it makes much, but this is surprisingly filling! Adjust the amounts of the ingredients to make the number of servings desired.
