How to make it

  • Cook Pasta in salted water until al dente.
  • Brown sausage in a large deep fry pan, remove and set aside.
  • Cut up squash into bite sized chunks
  • Dice onion how ever you like it
  • Crush Garlic
  • Blanch, peel and chop Tomatoes
  • Finely chop Basil
  • Parmesan cheese
  • Add olive oil, enough to saute veggies, to pan the sausage was browned in.
  • Add Garlic and cook until fragrant
  • Add onion and cook until translucent
  • Add Squash and saute until almost tender
  • Add tomatoes and saute until liquid is almost evaporated
  • At this point add the butter, a little more than 2 TBS if you like to finish and add some body to the sauce.
  • Mix with pasta, add fresh Basil, top with uber Parmesan and serve.
  • Enjoy and remember.... this is what I like. There ain't no rules!!!
