Mikey's Summer Squash Pasta

- 4 small yellow crook neck squash shopping list
- 4 small zucchini shopping list
- 5-6 cloves of garlic shopping list
- 4 roma tomatoes shopping list
- 1 small onion shopping list
- olive oil shopping list
- 2 TBS butter shopping list
- fresh ground black pepper shopping list
- salt shopping list
- 1 lb bulk sweet italian sausage shopping list
- 1/4 cup fresh basil shopping list
- 1 16oz package of your favorite Pasta shopping list
How to make it
- Cook Pasta in salted water until al dente.
- Brown sausage in a large deep fry pan, remove and set aside.
- Cut up squash into bite sized chunks
- Dice onion how ever you like it
- Crush Garlic
- Blanch, peel and chop Tomatoes
- Finely chop Basil
- Parmesan cheese
- Add olive oil, enough to saute veggies, to pan the sausage was browned in.
- Add Garlic and cook until fragrant
- Add onion and cook until translucent
- Add Squash and saute until almost tender
- Add tomatoes and saute until liquid is almost evaporated
- At this point add the butter, a little more than 2 TBS if you like to finish and add some body to the sauce.
- Mix with pasta, add fresh Basil, top with uber Parmesan and serve.
- Enjoy and remember.... this is what I like. There ain't no rules!!!
