How to make it

  • Preheat the oven to 350 degrees.
  • Poke the sweet potato with a fork a few times and pop it in the microwave for 5 minutes. Turn over and microwave another 2-3 minutes or until soft. When cool enough to handle, cut in half and remove the flesh with a spoon into a large bowl.
  • Add the butter and mix well with a hand mixer or in a stand mixer.
  • Add the remaining ingredients and blend well.
  • Spoon the mixture into the pie shell. Place on a cookie sheet and bake for 55-60 minutes.
  • Cool completely before serving with fresh whipped cream.
