How to make it

  • In a large frying pan, add oil, then onion and garlic and cook on gentle heat, some 5 minutes or so, until golden;
  • Add tomatoes, herbs and seasonings, stir well to mix, and bring to boil;
  • Reduce heat and simmer, stirring occasionally to break down the tomato mixture, for some 20 minutes or so or until slightly thickened;
  • Meanwhile, in a separate pot filled with lightly salted water, bring the water to the boil, add the pepper strips and parboil for some 5 minutes or so;
  • Drain and combine with tomato mixture;
  • Continue cooking some minutes more until peppers are tender;
  • Serve
