Italian Green Peppers - Spanish Style

- 2tbsp Extra Virgin Olive Oil shopping list
- 120g/4oz Onion - sliced shopping list
- 2 cloves Garlic - finely chopped shopping list
- 5 large Italian Green Peppers - cut into 2.5cm/1in strips shopping list
- 1x 400g tin Plum tomatoes - chopped shopping list
- 1tsp Sugar shopping list
- 2tbsp fresh Oregano - chopped shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- In a large frying pan, add oil, then onion and garlic and cook on gentle heat, some 5 minutes or so, until golden;
- Add tomatoes, herbs and seasonings, stir well to mix, and bring to boil;
- Reduce heat and simmer, stirring occasionally to break down the tomato mixture, for some 20 minutes or so or until slightly thickened;
- Meanwhile, in a separate pot filled with lightly salted water, bring the water to the boil, add the pepper strips and parboil for some 5 minutes or so;
- Drain and combine with tomato mixture;
- Continue cooking some minutes more until peppers are tender;
- Serve
