Red Enchilada Sauce

- Half cup onion (or half onion) chopped shopping list
- 4 cloves garlic shopping list
- Minced half cup green bell pepper chopped shopping list
- 1 tablespoon butter or olive oil shopping list
- 1 15 oz. can tomato sauce shopping list
- 1 15 oz. can diced tomatoes shopping list
- 1/2 cup of chicken broth shopping list
- 1 tablespoon ancho chili powder shopping list
- 1 teaspoon cumin shopping list
- 1 teaspoon dried marjoram shopping list
- 1 teaspoon smoked paprika shopping list
- 1/2 teaspoon dried basil shopping list
- 1/2 teaspoon ground black pepper shopping list
- 1/2 teaspoon dried coriander powder shopping list
How to make it
- Melt butter in medium sauce pan over medium high heat, add onions, bell peppers and garlic and cook until soft and tender, about 3-4 minutes.
- Stir in tomato sauce and diced tomatoes, and add spices
- .
- Bring to low boil stirring and reduce to low and simmer for 20 minutes.
- I use my emulsion blender right in the pot to smooth the sauce and gets the chunks out.
