Southern Brunswick Stew

- (1) 3lb whole chicken, cooked, skinned and deboned shopping list
- (1) 3lb roast beef, cooked, deboned and fat removed shopping list
- (1) 3lb pork roast, cooked and fat removed shopping list
- (1) 32oz chicken broth shopping list
- (1) 32oz beef broth shopping list
- (1) 5lb bag of white potatoes, peeled, cubed, cooked and mashed shopping list
- (1) 16oz bag of frozen lima or butter beans, cooked and mashed shopping list
- (2) large onions, peeled, chopped and cooked shopping list
- (2) 14.75oz cans of creamed corn shopping list
- (2) 1lb cans of crushed tomatoes shopping list
- 2tsp cayenne pepper shopping list
- 2TBLSP sugar shopping list
- 1TBLSP paprika shopping list
- 3TBLSP Worcestershire sauce shopping list
- 2tsp seasoned salt shopping list
- 1TBLSP ground black pepper shopping list
- 1TBLSP salt shopping list
- 1/2tsp onion powder shopping list
How to make it
- This recipe makes 10-12 gallons of stew.
- 1- In a crock pot cook meats along with chicken and beef broth. Cook chicken until it reaches 190 degrees and remove. Let it cool until able to touch. Remove skin, bones and fat and shred meat using your fingers in a large bowl. Do not put into a food processor. While doing this you can cook the beef and pork roast. in same broth. I cooked until the meat fell apart 4-5hrs. Do the same as you did with the chicken, remove fat too. Shred using finger and put with the chicken.
- 2-In a large pot peel and chop potatoes and add water to cover. On medium heat cook potatoes until tender and drain water. Mash into a large bowl. In same pot put frozen beans and cover with water. Boil until tender, may take longer than potatoes, Drain water and mash and put with potatoes. Chop onions, add water to cover and cook until translucent. Save the onion water. Pour water and onions on top of beans
- 3- In a 10 gallon plus pot put all meat and veggies and broths into pot. Add tomatoes, creamed corn, and spices and let it simmer. Stir and do not let it burn on the bottom. If too thick add 1 cup of water at a time to get the right consistency. This is a stew and not soup. *If your crock pot is big enough you can put everything in it.
