Mikey's "Chili"

- 3-4 pounds of Ground beef shopping list
- 1 pound bacon shopping list
- 1/4 pound Salt Pork shopping list
- 4 sweet bell peppers ( I use a green a red a yellow and an orange) shopping list
- 3 Jalapenos shopping list
- 2 large Red Onions shopping list
- 8 lg cloves of Garlic shopping list
- 2-3 oz of your favorite Hot Sauce ( I use Franks) shopping list
- 4 15.5 oz cans of beans (pink, red, pinto, black, 1 of each) shopping list
- 2 15.5 oz can of Sweet Corn shopping list
- 2 28 oz cans of crushed Tomatoes shopping list
- 1/4 cup of chili powder shopping list
- 2 tsp Cumin shopping list
- 2 tsp Smoked Paprika shopping list
- black pepper shopping list
- Salt shopping list
- Water or Stock as needed shopping list
How to make it
- You need a Large heavy Stock Pot !!
- Diced up the Bacon and Salt Pork, put it in the pot and start to brown
- When the Bacon and Salt Pork are about done browning add the Ground Beef, cumin, paprika, Salt and Black Pepper to taste and continue to cook until Beef is cooked.
- Coarsely chop the Onions, Peppers and garlic and add to the pot when beef is cooked.
- Cook veggies in the meat until everything begins to get tender.
- Add Tomatoes and Chili powder, and Hot Sauce, if you think you don't have enough liquid add a little water or stock to the pot and let this simmer for 10 to 15 minutes, stirring occasionally.
- Add the corn ( do not drain!), and continue to simmer a few minutes, keep stirring.
- Lastly, turn the heat on the stove down to low and add your beans, drain or not it's your choice, I don't. Let this cook a bit stirring often so the beans don't stick to the pot because the sure do like to!!
- Serve it in a bowl, a cup, over rice, throw a little shredded cheddar on top,
- what ever!
- As always, taste your work often as you go along in order to keep the flavor layers. As far as the spices go, or any of the ingredients for that matter, add too or take away from as you prefer. There ain't no rules and I'm sure there are multitudes of recipes like this out there.... This was my big seller ! Enjoy
