Ingredients
  • 2 cups sugar
  • 2 cups flour
  • 2 eggs
  • 2 teaspoon baking soda
  • 1 - 20 oz. can of crushed pineapple with syrup
  • 1 cup flaked coconut
  • 1 cup chopped macadamia nuts
  • Topping
  • 1/4 pound margarine or butter
  • 1 - 8 oz. cream cheese
  • 1 1/2 cup powder sugar
  • 1 teaspoon vanilla

Directions
  1. Mix all ingredients together
  2. pour into a 9X13 inch pan or 6 small loaf pans, sprayed with cooking spray of your choice.
  3. Bake at 350 degrees, 35 to 40 minutes.
  4. If you use the small loaf pans, they should be ready in about 20 minutes, but check with a toothpick to see if the cakes are done.
  5. Topping
  6. Mix all ingredients at high speed
  7. Spread on COOLED CAKES.
