How to make it

  • Melt the butter in a warm skillet add the sliced onion and stir to coat the onion with the butter.
  • Raise the flame to medium and allow the onion to cook down and take on a little color just prior to brown. Add the garlic and when you begin to smell the aroma of the garlic then add some salt and pepper to flavor.
  • Add the wine and reduce to about 1 third look for a thicker consistency that will slightly stick to a wooden spoon.
  • Add 1 lb slightly undercooked spaghetti and coat the pasta by mixing well. Add the cheese and mix again allow the cheese to melt in. If you feel it is to dry add a cup of the pasta water and continue to mix well.
  • Add the thyme stir taste and adjust for seasoning if necessary.
  • Plate with a splash of fine Extra Virgin Olive Oil, grated cheese and fresh ground black pepper.
  • Garnish with fresh chopped basil or parsley and serve
