How to make it

  • Heat oven to 350 degrees. Line a 13X9 pan with no-stick foil, letting the ends of the foil extend over the sides of the pan; set aside. In a medium bowl, combine flour and brown sugar for topping. Cut in butter until mixture resembles coarse crumbs. Stir in nuts, if using; set aside.
  • In another medium bowl, whisk together flour, cinnamon, baking soda, and salt for the cake; set aside. In a large bowl, whisk together mashed bananas, sugar, oil, eggs, sour cream, and vanilla until well combined. Stir in flour/cinnamon mixture just until combined. Spread mixture evenly in prepared pan and crumble topping over the top. Bake 40 mins. or until a toothpick inserted in the center comes out clean. Cool completely in the pan on a wire rack. Lighty sift powdered sugar over the top of the cooled cake.
  • Note: My husband doesn't like what he calls "stuff" in baked goods, meaning chopped nuts, so I leave them out for him, but they make a wonderful addition to the topping that I really like. Unless you have a nut allergy, I recommend adding them - yum!
