Flan De Mascarpone

- 1 1/2 cups sugar, divided shopping list
- 7 egg yolks shopping list
- 1 (14-ounce) can sweetened condensed milk shopping list
- 1 (12-ounce) can evaporated milk shopping list
- 3/4 Cup heavy cream shopping list
- 1 Tsp vanilla extract shopping list
- 1/8 teaspoon salt shopping list
- 1 Tbs orange liquor (cointreau) optional shopping list
- 4 egg whites shopping list
- 8 ounces Mascarpone cheese shopping list
- Orange zest optional shopping list
How to make it
- Cook 1 cup sugar in a medium-size saucepan over medium high heat and cook until sugar melts and turns to a light amber brown. Quickly poor the hot caramelized sugar into 9 inch or so cake pan. Using oven mitts, tilt the pan to evenly coat bottom and sides. Let stand until the melted sugar hardens.
- Whisk together egg yolks with the condensed milk, evaporated milk, 3/4 cup cream, vanilla and orange liquor (optional) in a large bowl and whisk until smooth.
- Combine the egg whites, mascarpone or cream cheese, and remaining 1/2 cup sugar in another bowl and whisk until smooth.
- Poor egg white mixture into egg yolk mixture add the salt and whisk together.
- Poor mixture through a wire-mesh strainer into the cake pan over the caramelized sugar. Put the pan with the custard into a larger pan onto the lower oven rack of your oven. Add hot water into the larger pan until the water comes just about up to 3/4 the way of the flan pan.
- Bake for 1 hour and 5 minutes in a pre heated 350 degree oven. Check the center of the flan with a tooth pic to see if it is done. Remove the pan from water bath cool completely. Cover and chill overnight or at least 3 hours.
- Run a knife around edge of flan to loosen invert onto a serving platter. plate and garnish with the orange zest and serve.
