How to make it

  • I fully admit I usually don't measure when I cook. So take my measurements and directions with that grain of salt. You can make this your own by adding or subtracting anything. The idea is to give you guidelines to make awesome chili.
  • Generously coat short ribs with Chili 9000. Let them come to room temp, maybe 15 minutes
  • Add 2-3 T olive oil to Dutch oven and set on med high temp.
  • When Dutch oven is hot braise beef on each side till brown. Approx 5 minutes on each side. May do in batches.
  • Remove from stove and add liquid. I used some beef stock and water enough to cover all the meat.
  • Cover and place Dutch oven in oven at 350 for about 3 hours.
  • Test to be sure they are well done and easily break apart.
  • Put in frig over night and remove the next morning to remove the fat.
  • Place the short ribs in the crockpot, add a cup of the braising liquid give or take a cup.
  • Add in crushed tomatoes, beans, peppers and anything else you
  • Ike in chili. Maybe even another tablespoon of Chili 9000 or Penzeys Chili powder, your choice of heat!
  • Cook in crockpot for 3-4 hours on high, or longer on low.
  • Check it halfway through and add more braising liquid if you like. I sometimes add a can of V8 or tomato juice.
  • Garnish with your choice of sour cream, grated cheese, fresh chopped jalapeños, onions or guacamole. Serve in nice deep bowl with tortillas or serve over rice or pasta!

    Minkey, this a simply brilliant choice of meats! Short ribs will give exactly what you're looking for as a meat. Personally, I'd use beer instead of water, and instant coffee and cocoa, and some celery, sweet bell pepper, and such, but that's just what blows my hair back, and I agree with the long, slow cook, but not removing any fats. Good on you for posting!
