Chocolate Peanut Butter Energy Bites

- 1 cup dry oatmeal, (gluten free works fine also) shopping list
- 2/3 cup tasted unsweetened coconut flakes shopping list
- ½ cup peanut butter shopping list
- ½ cup ground flax seed shopping list
- 1/3 cup honey or agave nectar shopping list
- ¼ cup unsweetened cocoa powder shopping list
- 1 tablespoon chia seeds shopping list
- 1 teaspoon vanilla extract shopping list
How to make it
- 1. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and chill in the refrigerator for at least half an hour, to make the mix easier to handle and mold.
- 2. Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
- Notes: *If the mix seems to dry, add in an extra tablespoon or two of honey or peanut butter. If the mix seems too wet (which may happen if you use natural peanut butter), add extra oatmeal.
- Note: chill for an hour if you can. and press the mixture into the scoop that way they don't crumble as much!
- After following the directions exactly. Next time I will cut the cocoa powder in half. because I like to taste the peanut butter too, and this recipe as written wipes out the peanut butter taste almost completely.
- EDIT! After setting for 24 hours the chocolate mellowed and the peanut butter flavor came through. I think officially so far these are my favorite! they taste like a Bake less chocolate drop cookie.
