How to make it

  • Heat a skillet with enough oil to just cover the bottom. When the oil is hot add the anchovy and allow them to dissolve. If you are not using anchovy skip that step. Add the the garlic when you begin to smell the aroma of the garlic add the drained tuna and bring to a simmer . Add a touch of salt and black and red pepper to flavor.deglaze with the wine.
  • Add the tomatoes raise the temp and bring to a boil then reduce to a simmer. Allow to cook about 30 minutes stirring occasionally. When stirring smash the tomatoes slightly a little at a time.
  • Add 1 lb of slightly under cooked spaghetti or linguini to the skillet cook until you reach your desired texture.
  • Put into a serving platter sprinkle with chopped parsley, grated cheese and serve.
