How to make it

  • 1 preheat oven to 350 degree
  • 2 In a medium saucepan combine milk, butter and salt. Bring to a simmer over medium-high heat then reduce heat to maintain simmer. Gradually whisk cornmeal until mixture is thickened about 1 minute. remove from heat.
  • 3 In a large heat proof bowl whisk together egg yolks and gives. Gradually whisk in cornmeal mixture. Fold in corn.
  • 4 Butter a 9 inch cake pan.
  • 5 Beat egg whites on medium high speed until soft peaks from about 1 minute.
  • 6 stir about 1/4 quarter of egg whites into cornmeal mixture to loosen up. Gently fold in remaining egg whites
  • 7. Pour batter into cake pan and bake until fluffy and light brown about 40 minutes
