Cornmeal Creme Fraiche Spoon Bread

- 2 1/2 cups whole milk shopping list
- 1 stick unsalted butter plus extra for cake pan shopping list
- 2 1/2 tsp coarse salt shopping list
- 1 cup fine ground cornmeal shopping list
- 1/2 cup crème fraiche shopping list
- 3 large eggs separated shopping list
- 1/2 cup shopped fresh chives shopping list
- 1/2 cup frozen corn thawed shopping list
How to make it
- 1 preheat oven to 350 degree
- 2 In a medium saucepan combine milk, butter and salt. Bring to a simmer over medium-high heat then reduce heat to maintain simmer. Gradually whisk cornmeal until mixture is thickened about 1 minute. remove from heat.
- 3 In a large heat proof bowl whisk together egg yolks and gives. Gradually whisk in cornmeal mixture. Fold in corn.
- 4 Butter a 9 inch cake pan.
- 5 Beat egg whites on medium high speed until soft peaks from about 1 minute.
- 6 stir about 1/4 quarter of egg whites into cornmeal mixture to loosen up. Gently fold in remaining egg whites
- 7. Pour batter into cake pan and bake until fluffy and light brown about 40 minutes
