How to make it

  • 1. Add oats and nuts to large skillet pan. Cook over medium high heat stirring frequently till oats are toasted golden .
  • 2. Turn oat mixture into 9x13 inch pan and add shredded coconut, cocoa nibs, and chia seeds and set aside.
  • 3. In same skillet pan add coconut oil, brown sugar, and brown rice syrup. Cook over medium heat (stir once to mix ingredients well) until bubbly.
  • 4. Turn heat off and add oat mixture. Toss well so everything is coated.
  • 5. Return mixture to 9x13 pan. Spread out and pat down. Allow to cool completely. When cool cover and refrigerate.
  • 6. After mixture sets in refrigerator break apart and store in a well sealed container. Keep refrigerated.
  • Note: Honey can be used in place of Brown Rice Syrup but I like Brown Rice Syrup because it's not real sweet. Nuts, unsweetened coconut, cocoa nibs, or chia seeds can be substituted with other add-ins such as dried fruit, chocolate chips, seeds, etc. or left out. Use your judgment on amounts.

    Excellent!!! I loved this granola. Unlike so many other granola recipes, this one isn't oily or overly sweet. I didn't have enough of any one nut so I used a combo of almonds, sunflower seeds and pumpkin seeds. I didn't have Brown Rice Syrup and went with a local honey. Great recipe and very easy to make. This will be great for snacks, on yogourt or berries. Thanks for sharing Linda.
