How to make it

  • Measure warm water, honey and yeast in a large bowl. Stir gently. Place dry cloth over bowl and let sit for five minutes or until yeast is dissolved and foamy.
  • Add shortening, caraway seeds,rye flour and 1 cup white flour and beat vigorously with a spoon for about 2 minutes, or blend on low speed of an electric mixer, scraping sides and bottom of bowl often.
  • Add remaining flours and stir with a spoon until smooth.
  • Cover and let rise in a warm, draft-free place until double in size, about 45-60 minutes.
  • Stir batter down, beating about 25 strokes.
  • Grease a loaf pan and place batter in, smoothing out the top with a floured hand.
  • Cover and let rise until dough reaches top of the pan, about 40 minutes.
  • Preheat oven to 375 and bake the single loaf 45-50 minutes or until done

    This was not as wet as I expected, but I've only made one batter bread recipe that I can compare. I reduced the bread flour to 1 1/2 cups and added 2 tbl extra water and still ended up with a loose dough ball that couldn't be spread out. I wasn't sure what consistency I was really going for so I just plopped the loose ball in the pan and it turned out great. Only took 35 minutes(convection oven) to bake. Nice texture and flavor, nice size loaf, and great for both sandwiches and toasting. I did use white whole wheat instead of regular and left out the caraway this time since the family doesn't care for it.
