Smoked 'taters

- 6 large Russet Potatoes (or 1 for each person eating). shopping list
- Olive Oil shopping list
- Coarse Kosher Salt shopping list
How to make it
- Wash Potatoes and score each across the top 5 or 6 times with a sharp knife. The scores don't need to be too deep, skin just needs to be cut through
- Take a bowl or deep platter and pour a 1/4 cup or so of Olive Oil in.
- To that, add a good amount of Kosher Salt, 2-3 TBS or more depending on the number of Potatoes, you should have a pretty thick mix.
- Roll each of the Potatoes in the oil and salt making sure they are well covered, I normally rub the spuds around in my hands.
- Place score side up in your smoker, or however you smoke your meats, at about 225 - 275 degrees F for around 2-3 hours or until they are tender to the touch. Time will vary depending on size of Potatoes and temperature you are smoking at.
- Serve hot with Butter, fresh chopped chives and sour cream. Enjoy!!!
