Potato Pampushki

- 2½ cups mashed potatoes ( add 2-3 cloves of garlic to potatoes while boiling and mash with potatoes) shopping list
- 1½ lbs of potatoes, about 4 medium-sized shopping list
- salt, pepper shopping list
- ½ cup farmer's cheese or ricotta shopping list
- ⅛ cup parmesan cheese, grated shopping list
- chives, minced shopping list
- 2-4 Tablespoons heavy cream shopping list
- oil, for pan frying shopping list
How to make it
- Peel potatoes and grate on a box grater. Squeeze out all moisture by placing the potatoes in a cheesecloth or kitchen towel and squeeze out all excess moisture.
- Combine the grated potatoes with the mashed potatoes. Season with 1 teaspoon of salt and ½ teaspoon of pepper. ( caramelized onions are a nice addition to potatoes if you choose! ). Set aside.
- In another bowl, combine the rest of the ingredients for the cheese filling.
- Take about a ¼ cup of potato mixture and form into a patty. Place about a 1½ teaspoon of the cheese filling and place into the center of the patty. Fold the potato mixture over the cheese filling, shaping it into an oval shape.
- In a nonstick skillet, heat about 2 Tablespoons of oil (and butter if you choose) and add the pampushki. Fry over medium heat, about 5-7 minutes per side, until golden brown.
- Drain on paper towels
- These are delicious served with fried pork chops and onions or sauerkraut and a nice rich brown gravy. Enjoy!!
