Carrot Cake

A good friend shared her family recipe for carrot cake with me. This is really moist and the best carrot cake I've ever eaten.
Ingredients
- 3 cups grated carrots shopping list
- 2 cups sugar shopping list
- 4 Eggs shopping list
- 1 1/2 cups cooking oil shopping list
- 2 cups flour shopping list
- 2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 2 tsp cinnamon shopping list
- 2 tsp vanilla shopping list
- 1 cup walnuts (chopped fine) shopping list
- Frosting---- shopping list
- 1/4 cup butter shopping list
- 8 oz cream cheese shopping list
- 3 3/4 cups powered sugar shopping list
- 1 tsp vanilla shopping list
How to make it
- Combine sugar, oil, flour, sale and cinnamon. Beat in eggs one at a time, stir in vanilla, carrots and walnuts.
- Bake at 350 40-50 minutes.
- For frosting mix together all ingredients until creamy. Frost when cake is cool and decorate with more walnuts and assorted fruit.
