Grandma Louise's Shrimp Casserole

- Paper towel dampened with a light oil shopping list
- 3 Lbs shrimp shelled & veined shopping list
- Italian Seasoned Breadcrumbs preferably homemade shopping list
- 1 Large can black olive rinsed and sliced shopping list
- 1 Large jar pimentos shopping list
- Extra virgin olive oil shopping list
- Shrimp stock or chicken shopping list
How to make it
- Make a stock from the shrimp shells.
- Wipe and rub the entire casserole dish with a paper towel dampened with light oil like canola. this will prevent burning.
- Put a light layer of breadcrumbs at the bottom of a casserole bowl to make sort of a bed for the ingredients. Lightly drizzle the breadcrumbs with evoo.
- Put a layer of shrimp. Then a scattered layer of pimentos and olives
- Lightly drizzle each of the layers with oil then the stock. Use your fingers to dribble the liquid on or try a spray bottle. You don't want to flood or douse the casserole with liquid just moisten it.
- Repeat the process until the casserole dish is completely full. I make 3 to 4 layers. With a layer of Breadcrumbs on top.
- Put into a 350 Degree pre heated oven for about 30 minutes covered with foil. Take the foil off and bake another 10 minutes or so.
