How to make it

  • Make a stock from the shrimp shells.
  • Wipe and rub the entire casserole dish with a paper towel dampened with light oil like canola. this will prevent burning.
  • Put a light layer of breadcrumbs at the bottom of a casserole bowl to make sort of a bed for the ingredients. Lightly drizzle the breadcrumbs with evoo.
  • Put a layer of shrimp. Then a scattered layer of pimentos and olives
  • Lightly drizzle each of the layers with oil then the stock. Use your fingers to dribble the liquid on or try a spray bottle. You don't want to flood or douse the casserole with liquid just moisten it.
  • Repeat the process until the casserole dish is completely full. I make 3 to 4 layers. With a layer of Breadcrumbs on top.
  • Put into a 350 Degree pre heated oven for about 30 minutes covered with foil. Take the foil off and bake another 10 minutes or so.
