Spaetzle For One Or Two

- 2 egg yolks plus 2 tbs of the white shopping list
- 1/2 cup flour shopping list
- 1/4 tsp fresh ground pepper, less if you don't love pepper shopping list
- 1/4 tsp salt, I use pink himalayan but use what you have shopping list
- 2 tbs milk, I use skim shopping list
- fresh ground nutmeg, about 1/4 tsp shopping list
- grated cheese, optional shopping list
- 1 tbs chopped parsley, optional shopping list
How to make it
- Place the flour, salt, pepper, and nutmeg in a small bowl and mix well.
- Separate the eggs but retain the egg whites.
- Add the eggs to the dry mixture and stir until throughly mixed. Add a little more egg white if the mixture is too stiff. It will be fairly thick, like a pan cake mix.
- Let the mixture rest for about 30 minutes.
- Bring a pot of salted water to boil.
- Push the mixture through a spaetzle maker into the boiling water
- Cook until the spaetzle rises to the top.
- Drain and place back into the pot and return to the stove for about 30 seconds to remove excess water.
- Season with a pat of butter and enjoy.
