How to make it

  • Place the flour, salt, pepper, and nutmeg in a small bowl and mix well.
  • Separate the eggs but retain the egg whites.
  • Add the eggs to the dry mixture and stir until throughly mixed. Add a little more egg white if the mixture is too stiff. It will be fairly thick, like a pan cake mix.
  • Let the mixture rest for about 30 minutes.
  • Bring a pot of salted water to boil.
  • Push the mixture through a spaetzle maker into the boiling water
  • Cook until the spaetzle rises to the top.
  • Drain and place back into the pot and return to the stove for about 30 seconds to remove excess water.
  • Season with a pat of butter and enjoy.
