How to make it

  • Cook the rice 2 cups rice 4 cups broth with salt and pepper. Is is best to cook it the day before or earlier that day and use it at room temperature.
  • Brown the sausage meat a large skillet with about 2 Tbsp oil and 1 tbsp butter on a high heat when brown set aside. Leave as much oil in the skillet as possible.
  • Lower the flame to medium and add a touch more oil if needed. Add the onion celery and diced pepper tops and saute until they begin to soften season it with salt and pepper. Add the garlic and the parsley and saute another few minutes to soften.
  • Add the wine and allow it to cook off.
  • Add about 1/2 cup marinara sauce and bring back to a simmer. Put everything into the bowl with the sausage add a little rice at a time until you get the consistency you are looking for.
  • Stuff the peppers rub the outside of the peppers with oil and put a sliver of butter on top of each. Put the rest of the marinara sauce in the baking pan then the stuffed peppers.
  • Bake at 350 degrees until the the sauce is bubbly. Allow to rest 10 minutes or so and serve.
