Herbed Turkey And Wild Rice Soup

- 6 slices bacon, cut into ½ inch pieces, or ¼ to 1/3 cup real bacon bits.*** see notes shopping list
- 1 pound turkey tenerloins cut into ¾ inch pieces, or leftover cooked turkey*** see notes. shopping list
- ½ cup onion, chopped shopping list
- ½ cup carrot, chopped shopping list
- ½ cup celery, chopped shopping list
- 29 ounces chicken broth shopping list
- 1 can cream of chicken soup (or 10 ounces homemade cream of chicken soup) shopping list
- ¼ teaspoon dried marjoram shopping list
- ¼ teaspoon black pepper shopping list
- 1 ¼ cups uncooked wild rice shopping list
- Sour cream, Optional shopping list
How to make it
- 1. In a 10 inch skillet over medium heat stirring occasionally cook bacon until crisp. Stir in turkey; cook stirring occasionally until turkey is brown; stir in onion, carrot and celery. Cook 2 minutes, stirring occasionally; drain. If using leftover turkey add toward the end to brown a little and warm through.
- 2. in the bowl of your 3 ½ to 6 qt. slow cooker add the soup and broth and whisk until smooth. Stir in marjoram and pepper. Stir in turkey mixture and wild rice.
- 3. Cover and cook on high for 30 minutes; Reduce heat to low and cook for 6 to 7 hours. If using sour cream stir in just before serving
- Notes: *** If using bacon bits and fresh turkey or chicken meat, Use either 2 tablespoons bacon grease, butter, or oil.
- ***If using leftover cooked turkey or chicken, you can forgo step 1 and just add the bacon grease, oil or butter to the crock pot.
- Also if it is too thick add more broth, just taste and adjust the seasonings.
