How to make it

  • It doesn't get any easier then this. Combine the three meats in a large bowl.
  • Chop the vegetables and put into a food processor and blend down to a fine mix.
  • In a separate bowl combine the chopped vegetables, eggs, tomato paste + salt and pepper for taste mix well.
  • Combine the two bowls together and add 1/4 cup of breadcrumbs and the Cheddar cheese chunks mix (Do not over work the meat it will cause the meatloaf to be hard) shape into a meatloaf.
  • I like to make mini individual size meatloaf's I don't think I will ever make one large meatloaf again. With 3.3 lbs of meat I make about 10 mini loafs.
  • Bake at 350 degrees F for 40 to 45 minutes remove allow to sit 5 to 10 minutes and serve.
