Ingredients
  • 6 slices thick cut bacon, diced
  • 1 Vidalia onion, diced
  • 4 cups diced chard, stems and leaves
  • 2 cloves garlic, minced
  • 1/4 cup shredded Gruyere cheese
  • 1/4 cup shredded sharp cheddar cheese
  • salt and pepper, to taste
  • 4 eggs, beaten
  • 1 cup milk
  • 1 cup Bisquick mix (I use my own mixture)
  • 1/4 cup Parmesan cheese

Directions
  1. Preheat oven to 350 degrees F.
  2. In a large skillet, saute diced bacon and onions until bacon is browned and onions are soft. Add diced chard and garlic, saute until chard stems are softened. Let cool while preparing a 10" pie plate with cooking spray. Spread chard mixture in bottom and top with cheddar and gruyere cheese.
  3. Combine rest of ingredients (eggs, milk, bisquick, Parmesan) and pour over chard mixture.
  4. Bake for 30-35 minutes until tester inserted in middle comes out clean and top is golden brown. Let sit for 10 minutes before slicing.
