Simple Meatloaf

- 1/4 - 1/2 Italian style bread crumbs, amount depends on how wet your meat is. shopping list
- 1/3 cup onion, micro planed or finely chopped shopping list
- 1 tsp micro planed garlic, or finely chopped shopping list
- 1 egg, for binding shopping list
- 3 hard boiled eggs shopping list
- 5 or 6 shakes of Worcestershire sauce, or more shopping list
- 8 oz lean ground pork shopping list
- 1 pound lean ground beef shopping list
- 1 tsp parsley shopping list
How to make it
- Heat oven to 350.
- In a large bowl combine 1 egg, parsley, bread crumbs, onion, garlic and worcestershire sauce.
- Stir well to combine.
- Add the ground meats and mix gently to combine. Do not overwork the meat or it will be tough.
- I like to rest the meat in the fridge for several hours at this point for the flavours to meld but this is optional.
- Place 1/3 of the mixture in a loaf pan and spread evenly.
- Create a small well, with the back of a soup spoon, down the centre of the meat.
- Place the three boiled eggs in the well and cover with the remainder of the meat.
- Spread the meat to make a loaf shape.
- Cook, covered with foil, for 30 minutes.
- Uncover for the last 30 minutes or until the loaf reaches 160, draining excess oil from the pan occasionally.

Nov 29/16 Another fantastic recipe from Brenda. Full of great flavours. I double the recipe and had one plan and the other with a brown sugar & Ketchup rubbed all over it. Will be making again for sure.
