How to make it

  • Heat oven to 350.
  • In a large bowl combine 1 egg, parsley, bread crumbs, onion, garlic and worcestershire sauce.
  • Stir well to combine.
  • Add the ground meats and mix gently to combine. Do not overwork the meat or it will be tough.
  • I like to rest the meat in the fridge for several hours at this point for the flavours to meld but this is optional.
  • Place 1/3 of the mixture in a loaf pan and spread evenly.
  • Create a small well, with the back of a soup spoon, down the centre of the meat.
  • Place the three boiled eggs in the well and cover with the remainder of the meat.
  • Spread the meat to make a loaf shape.
  • Cook, covered with foil, for 30 minutes.
  • Uncover for the last 30 minutes or until the loaf reaches 160, draining excess oil from the pan occasionally.

    Nov 29/16 Another fantastic recipe from Brenda. Full of great flavours. I double the recipe and had one plan and the other with a brown sugar & Ketchup rubbed all over it. Will be making again for sure.
