How to make it

  • Thread the birds onto the skewers, alternating them with slices of pancetta or bacon and the sage.
  • Salt lightly, and cook on the rotisserie placing a pan underneath to catch the juices.
  • Fry the polenta in this fat until a bit crisp and serve with the cooked birds.
  • This can be baked in the oven also. 350 for about 1 and 1/2 hour or less, depending on size.
  • My dad would make these with small chickens on special occasions.
  • It is a nice dish to have at a BBQ or at a dinner party if done in the oven.
  • With the polenta and roast potatoes and a salad, this makes for a lovely meal. Of course you must have some good Italian bread to mop up the juices. Enjoy!!.
