Courtney& Friends Chocolate Cake With Warm Gingered Pears

- For the Cake shopping list
- 2 cups black beans, rinsed and drained shopping list
- 4 large eggs shopping list
- 3/4 cup cocoa shopping list
- 1/2 tsp.baking powder shopping list
- 1& 1/2 cup sugar shopping list
- 1 tsp. vanilla shopping list
- For the Warm Gingered Pears shopping list
- 6 Honey Belle Pears washed and sliced shopping list
- 1 tbsp. crystallized ginger shopping list
- 1/4 cup dried cranberries shopping list
- 1 tbsp. butter ( i use Earth Balance) shopping list
- 1 tbsp. maple syrup shopping list
How to make it
- For the Cake
- Preheat oven to 350*, grease a 9" spring foam pan
- Puree beans using a food processor until beans start to form a paste
- Add eggs and mix 3-5 min
- Add cocoa, baking powder,sugar and vanilla, puree 2-3 min. until smooth
- Pour into pan, bake for 25 min or until a toothpick inserted comes out clean
- Let cool in pan for 10 min. before topping with warm pears.
- For the Pears
- In a large pan saute butter(Earth Balance), pears and ginger & dried cranberries.
- Finish with maple syrup.
- Top the cake with French Vanilla frozen yogurt and warm Gingered Pears.
