How to make it

  • Beat butter in a large bowl until fluffy.
  • Gradually add 1 cup of sugar, beating after each addition until fluffy.
  • Add grated orange and lemon rind.
  • Add eggs, one at a time, beating after each until very light.
  • Sift flour,baking powder, soda and salt.
  • Begin adding the dry mixture slowly, alternately with the buttermilk in small amounts.
  • Beat after each additional, until smooth.
  • Fold in the walnuts and pour batter into a greased (I use Marg.) bundt pan .
  • Bake in a 350 oven for an hour or until tooth pick comes out clean.
  • Strain the juice from the oranges and lemon into a saucepan.
  • Add the remaining cup of sugar and the rum.
  • Bring mixture to a boil, pour over cake, in pan.
  • If the cake does not absorb all of the mixture, reserve and spoon on later.
  • This cake is best the 1 or 2 days later.
  • Optional: Garnish with whole walnuts and orange slices.
