Orange Rum Cake

- 1 cup butter or margarine shopping list
- 2 cups sugar shopping list
- Grated rind of 2 large oranges and 1 lemon shopping list
- 2 eggs shopping list
- 2 1/2 cups sifted, A.P. flour shopping list
- 2 tbs baking powder shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 cup buttermilk shopping list
- 1 cup walnuts, finely chopped shopping list
- Juice of 2 large oranges shopping list
- Juice of 1 large lemon shopping list
- 2 tbs rum shopping list
How to make it
- Beat butter in a large bowl until fluffy.
- Gradually add 1 cup of sugar, beating after each addition until fluffy.
- Add grated orange and lemon rind.
- Add eggs, one at a time, beating after each until very light.
- Sift flour,baking powder, soda and salt.
- Begin adding the dry mixture slowly, alternately with the buttermilk in small amounts.
- Beat after each additional, until smooth.
- Fold in the walnuts and pour batter into a greased (I use Marg.) bundt pan .
- Bake in a 350 oven for an hour or until tooth pick comes out clean.
- Strain the juice from the oranges and lemon into a saucepan.
- Add the remaining cup of sugar and the rum.
- Bring mixture to a boil, pour over cake, in pan.
- If the cake does not absorb all of the mixture, reserve and spoon on later.
- This cake is best the 1 or 2 days later.
- Optional: Garnish with whole walnuts and orange slices.
