How to make it

  • Preheat the oven to 200C/400F/Gas 6;
  • Place the wedges in a large pan with slightly salted water, and on a high heat, bring to the boil;
  • Parboil for some 5 to 6 minutes or so then drain and dry a bit on some kitchen paper towel;
  • Place on a lightly oiled baking tray, drizzle with oil and lemon juice rubbing the liquids in well to ensure they are all equally well coated;
  • Place in the oven and roast, turning at least once, for some 20 to 25 minutes or so, or until golden brown and crisp;
  • Remove from the oven, sprinkle over the spice mix over and serve
