Spicy Potato Wedges

- 900g/2lb Potatoes - washed - unpeeled & cut into wedges shopping list
- Extra Virgin Olive Oil shopping list
- 2tsp ground Cumin shopping list
- 1tsp Paprika shopping list
- 2tsp Chilli Powder shopping list
- 1tsp freshly ground black pepper shopping list
- 2tsp Salt shopping list
- 2 to 3tbsp Lemon Juice - to taste shopping list
How to make it
- Preheat the oven to 200C/400F/Gas 6;
- Place the wedges in a large pan with slightly salted water, and on a high heat, bring to the boil;
- Parboil for some 5 to 6 minutes or so then drain and dry a bit on some kitchen paper towel;
- Place on a lightly oiled baking tray, drizzle with oil and lemon juice rubbing the liquids in well to ensure they are all equally well coated;
- Place in the oven and roast, turning at least once, for some 20 to 25 minutes or so, or until golden brown and crisp;
- Remove from the oven, sprinkle over the spice mix over and serve
