How to make it

  • Half the tomatoes and blend in blender or food processor until totally pureed;
  • Add wine vinegar and salt and whisk together well;
  • Transfer the mixture to a freezer container, place in freezer and freeze until semi frozen;
  • Remove from freezer and whisk again to break up any ice crystals;
  • Return to freezer and freeze solid.
  • To serve, soften at room temperature for some 15 minutes or so and scoop into balls.
  • Note: Can freeze for up to one month before using.
