Peperonata,(a Italian Sweet Pepper Dish)

- 4 medium to large bell peppers, the colors don't matter.i use all colors shopping list
- 3 garlic cloves(or more) shopping list
- olive oil shopping list
- tomatoe paste( about 1 heaping tablespoon) shopping list
- a few basil leaves shopping list
- salt and freshly ground black pepper. shopping list
How to make it
- Wash the peppers and remove the seeds
- Cut into slices about 1/2 inch thick
- Saute the whole garlic cloves in oil 1-2 minutes
- Add the peppers, salt and pepper to taste, stirring continuously for a couple of minutes
- Add the tomatoe paste, mix well and cook over low heat adding a bit of water if it gets to thick
- Continue cooking for about 20 minutes until the peppers are very soft
- Remove from the heat and add the basil leaves.
- I also if i have it add zucchini or egg plant for the last 10 minutes or so.
- This is a great side for any kind of meat, i like it with chicken.
- It is good hot or cold, and really good between 2 thick slices of crusty Italian bread.
- Also over poached eggs.
- Another oldie but goodie.
