How to make it

  • Pour oil into a pan and add the garlic.
  • Cook on med. heat until oil begins to bubble lightly for 3-5 minutes. If garlic begins to brown, lower heat.
  • Turn heat to low and continue cooking for an additional 15 minutes. This will eliminate any chance of botulism.
  • Strain well with a mesh sieve. Ensure that there are no pieces of garlic in the oil or the oil can go rancid.
  • Cool and store in a sterile bottle in the fridge.
  • Remove from the fridge one hour prior to using.
  • *Don't discard the garlic, spread it on a crusty bread.
  • **This can also be made on a need to use basis. Simply warm oil, add garlic and simmer for a few minutes.
