Garlic Infused Oil

- 6 cloves of garlic, cut in half shopping list
- 1 cup good quality olive oil shopping list
How to make it
- Pour oil into a pan and add the garlic.
- Cook on med. heat until oil begins to bubble lightly for 3-5 minutes. If garlic begins to brown, lower heat.
- Turn heat to low and continue cooking for an additional 15 minutes. This will eliminate any chance of botulism.
- Strain well with a mesh sieve. Ensure that there are no pieces of garlic in the oil or the oil can go rancid.
- Cool and store in a sterile bottle in the fridge.
- Remove from the fridge one hour prior to using.
- *Don't discard the garlic, spread it on a crusty bread.
- **This can also be made on a need to use basis. Simply warm oil, add garlic and simmer for a few minutes.
