How to make it

  • Preheat oven to 350 degrees and line 12 muffin cups with paper liners.
  • Prepare cream cheese filling

  • Using electric mixer or with hand mixer, beat cream cheese until smooth, add egg, sugar, and vanilla extract until smooth. Set aside.
  • Prepare cupcakes

  • In large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt. In separate bowl, mix water, oil, vinegar, and vanilla extract. Make a well in the center of the dry ingredients and stir in the wet ingredients until smooth. Evenly divide the batter into the 12 muffin cups. Spoon (or pipe) a few tablespoons of cream cheese filling (or omit if making the dairy free version) into the center of each cupcake.
  • Bake

  • Bake in preheated oven for 25 minutes or until cream cheese filling has set and cupcakes feel springy to touch. Cool completely. Ice if desired with cream cheese frosting and sprinkle with decorator sugar.
