Christmas Classic Mince Pies

- 350g/12oz Mincemeat shopping list
- 200g/7oz Plain Flour - sifted shopping list
- 45g/1½oz caster sugar shopping list
- 75g/2½ oz Ground almonds shopping list
- 120g/4oz Unsalted butter - diced shopping list
- 1 large Egg - lightly beaten shopping list
- Milk - to glaze shopping list
How to make it
- Preheat oven to 200C/400F/Gas 6;
- Lightly butter a 12-hole pie or cake tin;
- Tip the mincemeat into a bowl and stir so that the liquid is evenly distributed;
- Combine and blend the flour, sugar, almonds and butter in a blender/food processor until resembling breadcrumbs;
- Slowly mix in the egg then, using your hands, mould and smooth the mixture, wrap in clingfilm and chill for an hour or so;
- Thinly roll out the pastry on a floured surface;
- Cut out 12 circles large enough to fill the base of the pie tin;
- Press gently into each hole and fill with the mincemeat;
- Cut out another 12 slightly smaller discs and use to cover the mincemeat;
- Press the edges together to seal, make a small slit in the top of each, brush lightly with milk and chill for about 30 minutes;
- Bake the pies for 20 minutes until golden brown;
- Remove to a wire rack
