How to make it

  • Thaw corn kernels, if using frozen corn, and drain. Dice all ingredients to size of corn kernels.
  • mix well and let come to room temp. for service
  • the food photo is a close match

    It should hold up at least 3 days or longer. When it loses its fresh un wilted look I would toss it.

    Wow. Hope this does well in the fridge. Going to make up a batch of this but it will do three or four meals. Nice stuff and the fresh corn is in right now. RJ
