Baked Ricotta Pears Recipe

Ingredients
  • 4 firm ripe Josephine pears, halved stems intact
  • 200g low-fat fresh ricotta
  • 2 Tbs honey
  • 8 amaretti biscuits (cookies), roughly crushed

Directions
  1. Preheat oven to 180C (350F), line a baking tray with baking paper.
  2. Use a teaspoon to scoop out core of pears to make a hollow.
  3. Spoon ricotta into hollows, drizzle with half the honey and sprinkle with biscuit.
  4. Bake in oven for 25 minutes or until pear is tender and biscuit is golden brown.
  5. Drizzle with remaining honey to serve.
