How to make it

  • Cut the zucchini into small cubes.
  • Chop the onion and satue in a large skillet with the bacon or pancetta and the oil until the onion is soft and the bacon is cooked
  • Add the cubed zucchini and the bouillon cube
  • Brown slightly and then add the water
  • Cover the skillet and cook until the zucchini is soft and the water had been absorbed.
  • Lastly add the cream and mix well. remove from heat.
  • Meanwhile cook the pasta in plenty of salted boiling water.
  • As soon as the penne is cooked drain and add to the skillet.
  • Mix well and sprinkle with Parmesan cheese.
  • Serve immediately.
  • NOTES:
  • When i make this i do not use heavy cream. I use So Delicious Coconut milk.
